    Cube beef, dredge in flour. Sear in batches in pot. Set aside.

    Sauté onion, add tomato paste, cook 2 min. Deglaze with wine.

    Return beef, add broth, bay, thyme. Simmer 90 min covered.

  4. 4

    Add potatoes and carrots, simmer 35 min more.

  5. 5

    Season with salt and pepper, remove bay.
